Flour Tortilla Pizza

6 8-inch flour tortillas
1 teaspoon Italian herb seasoning
6 ounces no-salt-added tomato sauce
1 cup sliced mushrooms
1/2 cup sliced green bell peppers
1/2 cup sliced red bell peppers
3/4 cup diced onions
4 ounces small broccoli flowerettes
10 ounces shredded part skim mozzarella cheese
vegetable oil, spray
2 tablespoons parsley, minced

Preheat oven to 325F.
Let tortillas come to room temperature. Wrap in foil and warm in oven for 5 minutes. Remove from oven and
set oven on broil. In a bowl, combine Italian seasoning and spaghetti sauce. Mix well. Spread each tortilla
with 2 tablespoons of sauce and one-sixth of the vegetables. Sprinkle cheese equally over the six pizzas.
Lightly spray two large cookie sheets with vegetable oil. Place pizzas on cookie sheets and broil 3 to 4 inches
from heat. Cook until cheese melts and begins to brown. Remove from oven and sprinkle with parsley. Serve immediately.
